Tofu with Ginger and Green Onion (Hiyayakko)
This is the most popular and the easiest tofu dish. Low calorie and tasty. This usually becomes a good side dish. I usually use silken or soft tofu.

<ingredients, 4 servings>
1 package silken or soft tofu
(for the toppings)
1tsp grated ginger
1tbsp green onion, chopped
2tsp soy sauce
Bonito flakes optional
<how to prepare>
Cut tofu into quarters. Put each piece in individual bowls. Put grated ginger and chopped green onion on top of tofu. Pour soy sauce right before eating. Put some dried bonito flakes if you want.
Mapo Tofu
This Japanese recipe is originally from China, but it’s very popular in Japan.
Tofu is very low in Cholesterol and Sodium. It is also a very good source of Protein, Calcium and Manganese and iron. If it’s possible, get soft tofu. It tastes better. You can find it at Chinese, Korean or Japanese grocery stores.
<ingredients>
1/4 pound ground pork
4 Tablespoon olive oil (or sesame oil)
1 Tablespoon grated ginger
1 Tablespoon minced garlic
1 Tablespoon Chinese chili garlic paste
1 Tablespoon Chinese black beans paste<optional>
1 Tablespoon Chili bean sauce <optional>
2 Teaspoon Crispy bean sauce <optional>
1/2 cup chicken stock
1 pack soft tofu
2 Tablespoon soy sauce
1 Tablespoon sugar
2 Tablespoon Japanese sake or white wine <optional>
1 Tablespoon cornstarch
2 Tablespoon water
3 Tablespoon chopped green onion
<how to cook>
1.Heat a pan and add oil. When oil is hot enough, add ground pork and stir-fry it until the color darkens(about 5 minutes). Add ginger, garlic, Chili bean sauce, crispy bean sauce, Chinese chili garlic paste and Chinese black bean paste, and stir another minute.
2.Add the stock, soy sauce, sugar, and sake (or wine) and tofu. Stir gently sometimes. (about 3 minutes)
3.Mix cornstarch and water in a small bowl. Add to the pan and stir gently. (low heat)
4. Add green onion.
